Terry Laybourne Awarded Freedom of the City

We are delighted to share that our very own, Terry Laybourne has been awarded Newcastle upon Tyne’s highest civic honour – Freedom of the City.

The honour, presented by Lord Mayor Henry Gallagher at a ceremony at the Civic Centre, recognises Terry’s outstanding contribution to the city’s hospitality scene.

The Lord Mayor of Newcastle Cllr Henry Gallagher presented a framed scroll to Mr Laybourne in front of an audience of his family and friends in a ceremony at the Civic Centre.

Cllr Gallagher said: “Terry Laybourne has contributed enormously to the hospitality industry, the culture and the economy of Newcastle. His restaurants have become a by-word for excellence in fine dining and we are proud to call him one of our own.

He received the prestigious accolade in recognition of his contribution to the restaurant scene in Newcastle spanning 36+ years starting with 21 Queen Street, which was set up by chef Terry Laybourne, his wife Susan and brother Laurance (pictured above).

Terry’s 21 Hospitality has employed more than 5,000 people throughout his career – many of whom have gone on to make their own mark on the industry both locally and abroad, from New York to Australia. 

In 1988, he made history as the first chef in Newcastle to be awarded a Michelin star, just three years after opening 21 Queen Street. Since then, he has helped shape the city’s hospitality landscape through his 21 Hospitality group of restaurants, which includes acclaimed venues such as The Broad Chare, St. Vincent, Café 21, Porterhouse Butcher and Grill and Saltwater Fish Company. He was awarded an MBE for services to the industry in 1999.

On receiving the award, Terry said:

“It’s lovely to be recognised for having made a difference and that’s my overriding feeling,” Terry says.

“However, I am – and always have been – little more than a cog in the wheel.

“I’d suggest that I’m the architect, the conductor maybe, who didn’t necessarily build anything. The execution is down to my wonderful staff and the teams of talented people I’ve had around me over the years.

“I’d like to recognise those people and I would like them to know that this honour is as much about them as it is about me. The reality is that they make me look good.

“Our industry has a reputation for the transience of its workforce and yet there are people I work with now who’ve been by my side for many, many years.

“Being part of 21 Hospitality group is about being part of an organisation where loyalty goes both ways and where training and career development are a key focus.”

“I’m very proud to have played a small part in bringing Newcastle’s hospitality sector to the fore.”

As he reflects on his early years, Terry acknowledged his close partnership with Nick Shottel, Operations Director at 21 Hospitality group, whom he refers to as ‘Mr Hospitality.’
“I’ve been hugely fortunate to have Nick alongside me as my right-hand-man,” he says.

“And, of course, without the ongoing support of our customers, there would be no restaurants. Some of those people have been with us from day one – and I’m hugely grateful that they’re still there today.”

Terry’s name now appears on the sandstone wall of the Civic Centre’s Banqueting Hall, alongside fellow recipient Eddie Howe.

What a lovely surprise to have our humble plate of Calves’ Liver with Bacon, Onion, Mash and Cabbage named amongst The Michelin Inspectors’ Most Memorable Dishes of 2022-2023.

“It might have appeared simple at first glance, but this traditionally based dish encapsulated an array of different cooking techniques, bringing together the chef’s knowledge, skill and understanding to create an effective balance of flavours and textures. The lightly charred calves’ liver and the smooth, creamy mash contrasted perfectly with the salty bacon and crispy onions. There was also a lovely comfort food element to this dish, which was a perfect fit for the delightfully rustic pub setting.”

What?

Inspired by the neighbourhood bars and restaurants we found (and loved) during our travels through France and Italy, wine is very much at the heart of St Vincent, sometimes classic – though not always familiar – the wines are mainly from small independent producers, chosen purely and simply because we like them.

It’s not just about wine though, we’ll offer classic cocktails – inspired by 1920’s prohibition – classy vermouths and soothing amaros as well as craft beers and Illy coffee.

We are currently developing the food which will be all about simple things done well, offered from a concise, daily changing menu. Dishes will be fiercely seasonal and very much ingredient focussed, quite often influenced by the punchy flavours of Southern France and Italy which we all seem to love so much.

The Broad Chare listed at number 19 on the Top 50 Gastro List

We are thrilled, if somewhat humbled to learn that our little pub has made it into 2022 Estrella Top 50 Gastro Pubs List at no.19.

After almost two years of what’s been a very difficult time for everyone in the trade, it’s lovely to share this good fortune and a modicum of good cheer.

We’d very much like to thank the Estrella Damm Top 50 Gastropubs List for recognising our loyal, hard working team and the marvellous job that they do on a daily basis…

… and of course, a massive thank you to our extended family; our lovely, customers and our ever supportive suppliers, without whom we really don’t know where we’d be.

An extract from the listing

The pub aims to treat both food and beer as equal partners, ensuring that the venue has a genuinely ‘pubby’ feel with separate bar, ‘snug’ and dining areas across the floor. For the more formal diner, a 60-cover restaurant is positioned upstairs, and offers a locally sourced English menu.

Make no mistake, there is some serious skill on display from Head Chef Dan Warren.

The Broad Chare’s menu is a broad church, with previous highlights including Jerusalem artichoke soup with hazelnuts; salad of celery hearts, walnut, pear and Beenleigh Blue; and game terrine with hedgerow jelly and sourdough for starters.

Mains have consisted of dry-aged rib-eye steak with watercress and steak butter; charred celeriac with spelt, spenwood, black kale and truffle; and black pudding, wild mushrooms and devilled sauce.

For afters, expect the likes of lemon posset with spiced plums and shortbread; chocolate, chestnut and rum mess; and many other seasonally inspired sweet delights.

Beer-wise, the Broad Chare offers a range of local cask ales and liquid treats from further afield, as well as Guinness and West Mungo on tap.

Café 21 opens in York

21 Hospitality Group has continued its successful partnership with Fenwick to launch his Café 21 brand in the Coppergate store.

It’s the second such tie-up, as there’s already a successful Café 21 at the Newcastle Fenwick.

The existing York café – previously home to Carluccio’s – has undergone a refurbishment to provide a “light, bright and modern dining space” – featuring contemporary lighting, bold colours and curved booth seating.

Visitors to Café 21 York are able to take a break from their shopping for everything from a quick barista-made coffee to breakfast, brunch, lunch, afternoon tea or an early supper.

The Boy on the Shed by Paul Ferris

I’m really looking forward to starting my new book, delivered this morning by Amazon. It is called ‘The Boy on the Shed’ and is a memoir written by Paul Ferris, former player and physio at Newcastle United.

Paul Ferris was a teenage prodigy, becoming Newcastle United’s youngest-ever player in 1982, only for injury to ensure his promise went unfulfilled. He later returned to the club as a physiotherapist before earning a master’s degree and beginning a successful quest to qualify as a barrister. But the lure of football was always strong and he went back for a third spell at Newcastle, as Head of the Medical Department – again working closely with a host of big-name players and managers. The memoir tells of his life and family, growing up in Northern Ireland during the troubles and how a twist of fate brought him to Newcastle.

Ozark

I’m really enjoying ‘Ozark’ on Netflix at the moment. I had started watching it some time ago but, for one reason or another, stopped after about four episodes. I’ve started watching it again and I’m totally hooked. The story follows Marty Byrde, a financial planner who relocates his family from Chicago to a summer resort community in the Ozark Mountains, Missouri. With wife Wendy and their two kids in tow, Marty is on the move after a money-laundering scheme goes wrong, forcing him to pay off a substantial debt to a Mexican drug lord in order to keep his family safe. While the Byrdes’ fate hangs in the balance, the dire circumstances force the fractured family to reconnect.

My go-to listen on a Sunday morning is ‘The Craig David Funk and Soul Show’ on BBC Sounds. It is broadcast on Saturday evenings, but I always catch up with it on a Sunday morning whilst pottering around the house. It’s a great mix of classic and modern funk and soul. It’s a great listen.

I GET UP ON A MORNING FOR… Lunch!

 

BREAKFAST IS… Usually an episode of Friends or a Smiths album, maybe a cup of tea or a bit of fruit. I’m never up earlier than half 9, so it makes sense to wait for lunch.

 

TO STAY ACTIVE, I… Have been running most nights. I am trying to build up to running 50 miles a week before we go back. It’s even harder than I thought it would be… I might have to settle for 40!

 

TO UNWIND, I… Listen to music, but it’s not like I need to unwind. This is like uni but without the hangovers, less reading and more fresh air!

 

I’M WATCHING… All sorts. The Deuce, Modern Family, Cocaine Coast, White Lines and a couple of Euro 96 matches. The Pianist (Netflix) is also a great film – a lockdown must.

 

I’M READING… Eric Clapton – The Autobiography and El Diego – the Diego Maradona biography. 

 

I’M LISTENING TO… Loads of The Smiths and The Beatles. Others include: Stereophonics, The Stone Roses, The Rolling Stones, The Courteneers, Oasis and The Libertines.

 

SOMEWHERE I’D RATHER BE… Anywhere where you can go out and the bars are open, but if I’m really dreaming, it would have to be Vegas on a fight night or Rio for the World Cup Final.

 

THREE TOP TIPS FOR STAYING AT HOME…

Stay positive
Get as much fresh air as possible – tomorrow I’m going for fish and chips in Tynemouth with my little bro we are going to walk there and back.
Enjoy the sun when you can
